Meatloaf Grilled Cheese

Ingredients:

For the Meatloaf:

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

For the Grilled Cheese:

  • Sliced bread
  • Butter, softened
  • Sliced cheddar cheese
  • Sliced mozzarella cheese

Instructions:

For the Meatloaf:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper, minced garlic, ketchup, Worcestershire sauce, dried oregano, salt, and black pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a greased loaf pan, shaping it into a loaf.
  5. Bake in the preheated oven for 45-50 minutes or until the meatloaf is cooked through.

For the Grilled Cheese:

  1. Once the meatloaf is cooked, let it cool slightly, then slice it into 1/2-inch thick slices.
  2. Butter one side of each slice of bread.
  3. On the non-buttered side, place a slice of cheddar cheese, a slice of meatloaf, and a slice of mozzarella cheese.
  4. Top it with another slice of bread, buttered side facing out.
  5. Heat a skillet over medium heat and cook the sandwich on both sides until the bread is golden brown, and the cheese is melted.
