Ingredients:

  • 1 lb boneless skinless chicken breasts
  • 2 cups Minute rice (brown rice preferred)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can of water (use one of the soup cans)
  • 1 tbsp. butter
  • 1 envelope Lipton onion soup mix

Directions:

Preheat Oven and Prep Pan

  1. Preheat oven to 350°F (175°C).
  2. Using 1 tbsp. butter, grease a 9 x 13 baking pan.

Prepare Rice and Soup Mixture

  1. In a medium bowl, mix cream of mushroom soup, cream of chicken soup, water, and Minute rice.
  2. Pour this mixture into the buttered pan.

Arrange Chicken and Add Flavor

  1. Place chicken breasts on top of the rice mixture.
  2. Sprinkle Lipton onion soup mix evenly over the chicken.

Bake to Perfection

  1. Cover the pan with foil and bake for 1-1 1/2 hours, or until the chicken is fully cooked.
